Frozen Mango Margarita

Now that the final weekend of the summer is approaching, I have to tell you about an old recipe that I made in my single days living in the Belmont Heights neighborhood of Long Beach, California.  I have been meaning to post this recipe all summer and I’m just now getting around to it.  The weather is forecast to be hot and sunny here this weekend, so even though the calendar says the end of September, the weather and these cocktails will let you relive those summer days and maybe keep you from thinking about those cooler months ahead..

Frozen Mango Margarita

My roommate Sheila and I had some good times (and cocktails) in that second floor apartment.  The place was easily accessible to many fun bars and restaurants in Belmont Heights and Belmont Shore, and we were (relatively) young and single, so we took advantage of the location and the lifestyle to the fullest extent of the law.  When we weren’t out gallivanting around town, we threw parties or invited friends over for happy hour.  The view from our teeny tiny balcony was quite spectacular at sunset.

The cocktail I’m reminded of from this time in my life was the frozen mango margarita.  The recipe is so simple, and perfect for Thirsty Gals Corner- only a few basic ingredients.  For the mango chunks, I use the Trader Joe’s brand, but they are available at most supermarkets

Frozen Mango Margarita

2 cups (approx) frozen mango chunks, slightly thawed (I microwave them for about 25 seconds)
3 ounces tequila (as always, I prefer Hornitos Reposado)
1 ounce triple sec

3-4 ounces Jose Cuervo light margarita mix

Put all ingredients in a blender and blend until smooth, then squeeze a wedge of lime on top.  No ice needed- the mango is what makes this a frozen cocktail. This will make two average-sized margaritas (or one super-sized one).
